How to make Japanese soup stock(Bonito and kelp stock)

“Dashi” is the basis of Japanese cuisine.
There is also a simple powdery one, which is convenient.
But If you know how to make a full-fledged soup stock with only kelp and dried bonito
you can learn more about Japanese cuisine.

How to make the first soup

ingredients

1000 ml water
30 g dried bonito
20 g kelp

Method

Step 1
Put 1000 ml of water in a pan

Boil the heat over low heat for 10 minutes.
Don’t bring it to a boil.
* If it is too weak, the kelp will become slimy, and if it is too strong, the scent will deteriorate.

Bubbles pop out and the kelp is taken out just before boiling.
(Please do not throw it away as it will be used later.)

Step 6
Bring the liquid to a boil to remove the odor.
When the lye comes out, take it.

When the temperature drops after adding about 90 cc of water,
Add dried bonito flakes and simmer on low heat for 1 minute.
(Be careful not to bring it to a boil)

Take the lye and take out it with a clean cloth.
(Do not squeeze. Wait for the liquid to fall naturally)
The remaining kelp and dried bonito are used in the second soup stock.

Step 9
The first soup stock can eat it as a soup if you mix 3 g of salt, 1 tbsp of sake and 1 tsp of soy sauce.

How to make the second soup

ingredients

1000 ml water
15 g bonito frake
The remaining kelp and dried bonito of the first soup

Method

Step 1

Put water, kelp and dried bonito flakes in the first soup stock, and additional dried bonito flakes in a pot.
15 minutes on medium heat

Take the lye when it comes out.

Step 2
take out soup, if it is reduced by about 20%

Step 3
Squeeze well with a ladle.

Finely chop the remaining dried bonito flakes and kelp.
Fry in a frying pan to remove any water.

After that, boil it with 3 tbsp of soup stock, 1 tablespoon of sake, 1.5 tbsp of sugar, and 1.5 tbsp of soy sauce, and it will be a side dish of rice balls and rice.
