“KINPIRA” is a traditional Japanese dish using with burdock root.
This time, I introduce how to make it.
Burdock is rich in dietary fibre and is very nutritious.
Even if you don’t like the bitterness, you can enjoy it with “Kinpira”.
Ingredients
100 g carrot
1 tbsp. Sugar
2 tbsp. Soy sauce
2 tbsp. Sake
2 tbsp. Mirin (rice wine)
1 tsp. Sesame oil (if any)
A little white sesame(if any)
Oil
Method
Step 1
Mix sugar , Sake , Mirin and soy sauce .
Step 2
Cut carrots (and burdock) into thin rectangles.
Step 3
Put the oil into the pan.
Add burdock and carrot , and saute them until it become soft .
Step 4
Add sauce into the pan .
Simmer until the sauce down.
Step 5
Sprinkle white sesame as you like.
I get frozen burdock at Chinese supermarkets and Asian merchandise stores.
Very occasionally you can find it in a large supermarket.
I always procure many ingredients from Ocado.
Many Japanese use it.
You can get a lot of Japanese ingredients.
