Challenge to make “NATTO”, which is indispensable for Japanese people(in The UK)

Natto is said to be a Japanese food that foreigners are not good at. However, there are people who are not good at this Natto even in Japan.
On the contrary, there are many Japanese people who love it so much that it is useless without it. My family is so.
However, it is expensive and hard to get in the UK. I tried to make Natto using soybeans.

How to make Natto (It takes about 3~5 days)

Ingredients

200 g Dried soybeans
1 tsp.  Natto
Large container
Toothpicks (or bamboo skewers and forks)
Towel
Plastic wrap
spoon

Method

Step 1

Wash the soybeans with water. Soak in 2-3 times more water overnight to a full day.

Add 2 to 3 times as much water as soybeans and boil for about 3 hours.
Boil the soybeans until they are tender.

Pour boiling water over all containers, spoons, forks, etc. to prevent the invasion of bacteria.

From here, we will act quickly so that the soybeans do not cool down.
Pour the soybeans into a container that has been sterilized with boiling water.
Please note that if soybeans are stacked in three or more layers, the natto bacteria will not spread to the inside.

Add about 2 tablespoons of boiling water to the original natto, mix well, add to the soybeans, and mix evenly with a spoon.

Flatten the whole.

Cover it with plastic wrap and make a hole with a toothpick or fork.
Oxygen is indispensable for the increase of Natto bacteria.

Wrap it in a towel.
Leave it in a place to keep it at about 40 degrees for 20 hours.
I put my house on the radiator.
You can also devise a hot carpet or styrofoam box. (Yogurt maker, etc.)

After that, take a rest in the refrigerator for about 1 to 2 days to make delicious natto. (You can eat it right away, but if you take a rest, the taste will increase dramatically.)

How to eat Natto

If you eat natto as it is, it will only have an unpleasant odor.
Generally, it is eaten with soy sauce.
I sprinkle Bonito soup base.
I think the main cause of people who are not good at Natto is “smell”.
Or do they hate stickiness?
At that time, it is recommended to add grated radish.
