How to make “Chan-chan yaki”(easy salmon miso Japanese dish)

“Chan-chan-yaki” is a local dish of Hokkaido in Japan.
This is generally made by adding miso to salmon and vegetables such as cabbage and grilling them on an iron plate.
There is a record that more than 80 years ago, a fisherman in Hokkaido cooked on an iron plate made of metal barrels.It is said that “chan-chan” comes from the sound of a spatula colliding with an iron plate when baking, the Japanese word meaning dad”chan”, or the onomatopoeia “chacha”, which means “quick”.

Ingredients

(for 2 person)

2 slices of salmon
150 g cabbage
Onion 1/2
Carrot 1/2
Mushrooms
2 tbsp. miso
1 tbsp. White wine ( sake is better )
1 tsp. soy sauce
1 tsp sugar
10 g Butter (margarine is OK )

Method

Step 1

Sprinkle to the salmon with salt and put it in the refrigerator for about 10 minutes, then use kitchen paper to remove the water.

Cut the vegetables and mushrooms

Mix miso, soy sauce, sugar, and sake.

Butter the salmon in a frying pan and bake from the skin.

Take out the salmon and fry the vegetables.

When the vegetables are cooked, add the salmon and the mixed seasoning,
Let it boil for a while.

My sons love this dish very much.
They like meat better than fish, but they eat a lot of this dish.
