Chikuzen-style stew

Chikuzen-ni is a traditional Japanese vegetable dish in which chicken and vegetables are seasoned with soy sauce. This time I will introduce how to cook it.

Ingredients

300 g Chicken thigh
4 dried shiitake
300 g Lotus root
100 g Burdock
1 carrot
5 Taro
Oil
150 ml Shiitake mushroom soup (dried shiitake excess water)
5 tbsp. soy sauce
4 tbsp. Sake
4 tbsp. Mirin

Step 1

Soak the shiitake mushrooms in plenty of water and put them back.

Step 2
Taro is hard to cook, so cut it into pieces that are easy to eat and boil them for about 5 minutes in advance.
(I use a convenient frozen taro.)

Cut lotus root and burdock into pieces that are easy to eat.
Soak it in water.

Step 4

Cut the carrots into small pieces and cut the shiitake mushrooms into pieces that are easy to eat.

Step 5
Take out 150 ml of the remaining juice soaked in shiitake mushrooms.
If you don’t have 150ml, add water.

Cut the chicken into small pieces.

Lightly fry chicken in oil.

After that add lotus root, burdock and carrot.
After fry them, add taro and shiitake.

When the oil is all over, add shiitake soup, soy sauce, mirin, and sake.

Drop a piece of aluminum foil directly on the food to cover it entirely.
Reduce to medium heat and boil for about 10 minutes.

Remove the lye several times and boil until a little water remains.

 

You can cut the carrot into a flower-shaped shape or put edamame on the topping to serve it beautifully.
